Brandy Lemon Sumptuous Cake

It is a sumptuous, mouth-watering cake that is perfect for special occasions. Slice through the goodness of this unique recipe, and bring the taste of brandy drink into a different level. For this recipe, you will need two sets if ingredients, one for the brandy sauce which you will dab on the cake after it bakes, and one for the cake itself.

For the cake, you will need: 4 medium sized eggs, cup granulated sugar, 1 cup of flour, 1 teaspoon of baking powder, teaspoon salt, half a stick of butter, cup of finely chopped cashew nuts, and cup of finely chopped walnuts, teaspoon of cinnamon powder

For the brandy mix, you will need: 2 cups of sugar, cup lemon (squeezed), 1 tablespoon of maple syrup, and 1 cup of melted butter, cup brandy

For the cake mix, beat eggs in a bowl and add the sugar. Beat well, until both ingredients are finely mixed together. You may use an electric mixer. Add the flour into the mix, and keep beating until the batter is evenly mixed. Add the baking powder, salt, cashew, walnuts, and cinnamon into the batter. Keep mixing the batter and until all ingredients are mixed proportionately. Finally, add the half stick of melted butter, and continue mixing until the butter is even. Once done, pour this mix into a cake bowl with a hole in the middle. Bake this for 40 minutes in an oven pre-heated to 350 degrees.

While the cake is baking, you can do the brandy mix. In a casserole, heat the melted butter to just below boiling point, and add the 2 cups of sugar. Mix this until the sugar is melted. Add the maple syrup and the lemon. Add the brandy and keep mixing. make sure that the brandy mix is constantly hot.

You will know when the cake is done baking if you stick a toothpick in the cake; when batter still sticks to the toothpick when you pull it out, it you have to wait a few more minutes before taking it out. When the cake is done, you can let it set on a table. Using a toothpick, make holes on the cake. Make them about 5 millimeters in distance from each other; this will help your brandy mix seep in better into the cake.

Using a brush, dab the brandy mix onto the cake gently. Be sure to dab on all surface of the cake until all the brandy mix is consumed. You might ask why you need to dab instead of pouring the mix onto the cake. Well, pouring the mix will leave uneven portions of the cake tasteless, while some portions intoxicating. You want to spread the brandy mix evenly to maintain taste consistency.
